COURSE DESCRIPTION

Many of the participants who come to VLE expect typical “summer camp” food. Thankfully, Ross Point Camp & Conference Center employs one of the most outstanding cooks on the planet. Harriet Reece is not only an extraordinary chef, but she is also an incredible servant leader! She has willingly agreed to share her chicken enchilada casserole recipe with us and show us how to make it so we can all enjoy one of her most loved VLE meals all year round.

I was raised on the outskirts of the campus of Ohio State university. Attended Asbury University, Jerusalem university college, and received a Bachelor of Arts in theology from Ohio Dominican University. Began working in restaurants at 18 at the OSU golf course restaurant and then as “right hand man” at a fabulous, local Italian restaurant. Two years as head cook at Forest Springs Camp and Conference Center in north central Wisconsin. I have been the food service operator at Ross Point since 2011. I love my family, Jesus, swimming, outdoors, and bagpipes.
